Easy Roasted Chicken with Potatoes

The perfect everyday family meal, ready in around 30 minutes. Crispy roasted potatoes, juicy chicken, and the unmistakable flavor of cooking over wood fire make this a simple recipe you’ll keep coming back to. Bine uses the Glowen Raptor 1 oven with wood fuel for this recipe.

Preparing the Potatoes

  • Preheat the oven to around 260°C and place a skillet inside to heat up.
  • Carefully remove the hot skillet from the oven and add a drizzle of olive oil.
  • Cut the spring potatoes in half and place them cut-side down in the skillet.
  • Season with salt and return the skillet to the oven.
  • Roast until the potatoes begin developing a golden brown color.

Preparing the Chicken

  • While the potatoes are roasting, prepare the chicken.
  • Remove the wings, the lower thigh bones, and the tail.
  • Place the chicken breast-side down on a work surface.
  • Cut along the center and carefully debone the chicken, making sure not to tear or cut through the skin.
  • Season generously with salt, black pepper, and the chicken spice mixture.

Roasting

  • Check the potatoes and make sure they are nicely golden brown. If needed, return them to the oven for a few more minutes.
  • Once ready, place the chicken skin-side up directly on top of the potatoes.
  • Lightly season everything with a little more salt.
  • Return the skillet to the oven and roast for approximately 25 minutes.
  • Cook until the chicken is crispy on the outside and tender and juicy on the inside.

Serving

  • Slice the chicken and serve alongside the roasted potatoes.
