Preparing the Potatoes
- Preheat the oven to around 260°C and place a skillet inside to heat up.
- Carefully remove the hot skillet from the oven and add a drizzle of olive oil.
- Cut the spring potatoes in half and place them cut-side down in the skillet.
- Season with salt and return the skillet to the oven.
- Roast until the potatoes begin developing a golden brown color.

Preparing the Chicken
- While the potatoes are roasting, prepare the chicken.
- Remove the wings, the lower thigh bones, and the tail.
- Place the chicken breast-side down on a work surface.
- Cut along the center and carefully debone the chicken, making sure not to tear or cut through the skin.
- Season generously with salt, black pepper, and the chicken spice mixture.

Roasting
- Check the potatoes and make sure they are nicely golden brown. If needed, return them to the oven for a few more minutes.
- Once ready, place the chicken skin-side up directly on top of the potatoes.
- Lightly season everything with a little more salt.
- Return the skillet to the oven and roast for approximately 25 minutes.
- Cook until the chicken is crispy on the outside and tender and juicy on the inside.

Serving
- Slice the chicken and serve alongside the roasted potatoes.
