PEA PUREE, NDUJA PIZZA

Instructions for 5 Dough Balls:
1. Prepare the Dough:- In a large bowl, add half the remaining flour and the yeast mixture and mix well.
- Then add the salt and remaining flour.
- Dump the mixture onto a lightly floured surface and knead for 8 to 10 minutes.
- Drizzle the bottom of the bowl with olive oil, place the dough back into the bowl, and dash a bit more olive oil on top.
2. Let the Dough Rise:
- Cover the bowl with a dishcloth and set it in the sun or another warm place for 20 to 30 minutes, or until the dough has doubled in size — whichever comes first.
3. Divide the Dough:
- Divide the bulk-proofed dough into five 250-gram or four 330-gram pieces.
- Ball up the dough, ensuring the tops of the balls are smooth.
- Brush each ball with olive oil or warm water, cover with a dishcloth, and rest in a warm place for 15 to 20 minutes, or until doubled in size
4. Preheat Your Oven:
- Preheat your Glowen Raptor or Dragon pizza oven to 450°C (842°F). Measure the temperature at the middle of the stone using a Glowen IR thermometer.
5. Prepare Pea Puree :
- Heat up a bowl of water and when boiling put in frozen peas.
- Cook them until they are soft
- Take the food processor and put in the peas, and add the water from cooking until you reach the desired consistency.
- After you get the desired consistency season the puree with salt/pepper by taste
- Leave the puree to cool off
6. Prepare the Dough:
- Take the pizza dough out of the Dough Proofing Boxes.
- Spread it to the desired size, preferably 30cm (12 inches), to create your pizza base. Leave a bit of space around the edges for a nice crust.
7. Layer the Toppings:
- First, you gently spread the pea puree over the pizza in a circular motion.
- Put the mozzarella
- After that, put on some precooked sliced chicken breasts
- Next is precooked broccoli
- nduja
8. Baking process
- Place the pizza in the preheated oven.
- Wait a few seconds to allow the bottom of the pizza to warm up.
- Safely turn the pizza using a pizza peel or spatula.
- Bake for approximately 30 seconds on each turn, or until the crust turns a beautiful golden brown (avoid blackening).
9. Final Touch
- Once the pizza is baked to perfection, remove it from the oven and slice it up!
