You no longer have to give up your favorite pizza just because you can’t eat gluten. These days, gluten-free pizza can be just as tasty as regular pizza, thanks to special flours and techniques.

You’ll be surprised at how easy it is to make gluten-free pizza that tastes like it came from a gourmet pizzeria.

Step by Step Instructions

  • To make a tasty gluten-free pizza, you’ll need a Le5Stagioni GLUTEN FREE mix or any other mix that you have. We recommend you use a kitchen scale to measure your ingredients precisely. The right flour blend is important for you to achieve a perfect texture every time. Warm water will activate the yeast, while olive oil adds flavor and helps make the dough more pliable.

Dough Preparation

  • Mix the yeast with a whisk and water.
  • Add extra virgin olive oil.
  • Add the gluten-free pizza flour to the mixing bowl at the first speed. After 15 seconds, add the liquid ingredients. Then increase to the second speed.
  • Knead or mix for 1-1.5 minutes, no longer. Then, using a dough scraper, fold the dough by hand 4-5 times directly in the mixing bowl.
  • Using a lightly oiled dough scraper or pastry whisk, scoop the dough from the mixing bowl and divide it into 8 equal portions on an oiled baking tray.
  • After 1 minute, shape each portion into a small dough ball with oiled hands. It is important not to stretch or roll the dough. Press it into a ball with both hands, as if making arancini or bread dumplings. If you pull and stretch the dough, it will start sticking to your hands. In that case, let it rest for a minute or two and start again.
  • Sprinkle your work surface with gluten-free cornmeal. Lightly press and shape each dough ball into a round shape, leaving a 1 cm thicker edge. Do not stretch the dough as you would with a traditional pizza.

Shape the pizza and bake it

  • Transfer the dough on your pizza peel.
  • Preheat your Glowen Oven to 300°C.
  • Spread the sauce on pizza, bake it until crust starts to get golden-light brown.
  • Take the pizza out and put the rest of the desired toppings on your pizza.
  • Bake it again until cheese starts bubbling.

What to Serve with Gluten-Free Pizza

To serve with your gluten-free pizza, we recommend starting with a fresh salad. Mix arugula, cherry tomatoes, and shaved parmesan with a light vinaigrette for a crisp and flavorful side dish.

Roasted vegetables like Brussels sprouts or cauliflower also make excellent accompaniments that you can prepare on a separate baking sheet while your pizza cooks.

Gluten-free breadsticks brushed with garlic-infused olive oil and baked until golden provide a cozy addition to your meal. Use the same dough recipe as your pizza, shaping it differently for variety. Serve the breadsticks with marinara sauce for dipping.

To complete your pizza night, prepare a light dessert that won’t overwhelm. Something like fresh fruit drizzled with honey and mint leaves.

Pairing with Beverages for Gluten-Free Pizza

The best beverage pairings will largely depend on your pizza toppings. For classic tomato sauce and cheese pizzas, we recommend a crisp Italian red wine or a craft gluten-free beer.

If your pizza has vegetables or herbs, a light white wine or sparkling water with fresh citrus works well.

For non-alcoholic options, craft sodas or sparkling beverages are wonderful. You can mix sparkling water with a dash of bitters and fresh lime for a sophisticated mocktail.

Try unique combinations like BBQ chicken pizza with ginger beer or Margherita pizza with blood orange soda.

Serve your beverages at the proper temperature to maximize enjoyment of both your drink and pizza - chill whites and sparklers, and serve reds at room temperature.

Caloric Breakdown for Gluten-Free Pizza

When you eat a slice of gluten-free pizza, you’re consuming about 270-300 calories on average. The crust alone accounts for roughly 60% of those calories.

Your choice of toppings has a big impact on the total calorie count. The usual additions of tomato sauce, mozzarella cheese, and veggies bring the per slice total to that 270-300 calorie range.

Going light on the cheese can shave off 30-40 calories. Meats like pepperoni pack about 40 extra calories, while veggie toppings only add 5-10 each.

Using a thin crust cuts the base calories down to 120-130 per slice. Toppings like grilled chicken or turkey sausage are tasty ways to add protein without too many additional calories.
