Step by Step Instructions

Prepare the ribs
- Rub the ribs generously with olive oil and salt.
- Place them in the Glowen oven at around 160 °C.
- Once the fire has burned out, close the door and let the residual heat slowly cook the ribs.

Cook the potatoes
- Wash the new potatoes well and place them in a pot with cold water.
- Bring to a boil and cook until tender.
- Drain, then gently smash each potato with the bottom of a heavy glass until slightly flattened.

Pan-roast the potatoes
- Preheat a pan in the oven, then add a little olive oil and the sliced onion.
- Place the smashed potatoes on top of the onions and roast until golden and crispy.
- Sprinkle with Parmesan and allow it to melt and caramelize slightly.

Finish the ribs
- Once the ribs are cooked, remove any excess salt.
- Drizzle with a little olive oil and return them to the oven at maximum heat to crisp up the skin.
- Let the ribs rest for at least 10 minutes before slicing.

Serving
- Slice the ribs and serve alongside the Parmesan-crusted potatoes with onions.
- Garnish with freshly chopped green spring onion for freshness and color.
