Step by Step Instructions

Prepare the ragù
- Heat the olive oil in a Dutch oven or ovenproof pan that can go into the Glowen oven. Add the lamb mince and cook until browned. Stir in the onion, garlic, carrot, and celery and cook until softened.
- Mix in Worcestershire sauce, tomato paste, thyme, and rosemary. Deglaze with red wine and let the alcohol evaporate. Add the chicken stock and simmer until the sauce thickens. Finally, stir in the peas and set aside.

Prepare the mash
- Boil the potatoes in salted water until tender. Drain and mash with the butter and cream. Stir in the egg yolks and Parmesan until smooth and creamy.

Assemble the pie
- Spread the ragù evenly into an ovenproof baking dish. Top with the mashed potatoes, using a fork to create ridges for extra crispness during baking.

Bake in the Glowen wood-fired oven
- Place the dish into the preheated oven and bake at high heat until the potato topping is golden brown and slightly crispy around the edges.
