- 120 g sourdough starter (12%)

Shaping:
Perform 3 coil & folds every 30-45 minutes.
Shape těsto gently into loaves.
Proofing:
Cold proof v fridge 12-16 hours (up do 24h).
pečení:
Preheat pizza pec na walls do ~400°C (kámen ~280-300°C).
Score těsto pečení s steam (add ~200 ml water).
pečení 20 min s steam, then 15 min bez steam v 200-220°C.
Serving:
Cool down pro 2 hours before slicing.
